Instructions
1. Prepare the Dough
In a large bowl, beat the softened butter and powdered sugar until creamy.
Add the egg yolks, sour cream, vanilla, lemon zest, and salt. Mix until combined.
Gradually add the flour and gently knead until a soft dough forms. Don’t overwork the dough.
Wrap it and refrigerate for at least 1 hour.
2. Prepare the Walnut Filling
In a bowl, combine the ground walnuts, powdered sugar, cinnamon, and lemon zest.
Add the egg whites and vanilla and mix until you have a thick, spreadable filling.
If the filling seems too loose, add a little more ground walnut.
3. Roll Out the Dough
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Divide the chilled dough into several portions. Roll each portion very thinly on a lightly floured surface.
Cut the dough into small circles, approximately 2½–3 inches wide.
4. Fill and Shape
Place about 1 teaspoon of walnut filling in the center of each circle.
Fold the dough over the filling and gently shape it into a small crescent.
Place the cookies on the prepared baking sheet with the seam underneath.
5. Bake
Bake for approximately 15–20 minutes, or until the cookies are just lightly golden around the edges.
Don’t overbake them—the pastry should remain delicate and tender.
6. Coat With Powdered Sugar
While the cookies are still warm, carefully roll them in powdered sugar mixed with vanilla sugar.
Transfer them to a rack and allow them to cool completely.
For an extra snowy appearance, dust them with another layer of powdered sugar before serving.
